Lazy Girl IP Chicken Tortilla Soup

Eating healthy doesn’t have to boring, expensive, or tedious! I’ve fallen in love with my
Instant Pot because it makes healthy eating so much easier. This Lazy Girl Instant Pot
Tortilla Soup is delicious and only took 15 minutes to throw together! I love that it uses
common ingredients you probably already have on hand!

Here’s the recipe:

1 lb. pre-cooked shredded chicken (The instant pot will cook an entire 3 lb. bag of
frozen chicken tenderloins in 23 minutes so you’ll have chicken on hand for several
meals!)

1 can chicken broth
2 cups water
1 can black beans, drained and rinsed
1 can red enchilada sauce (about 10 oz.)
1/2 large white onion, chopped (about 1 cup)
2 cans rotel (I used original), undrained
1 lb. bag of frozen corn
1 tsp. cumin
1 tsp. chili powder
1 tsp. garlic
1 tsp. salt
1/2 tsp. black pepper

Throw it all in the Instant Pot then set it at manual for 15 minutes. When it’s done, quick
release carefully and top with sour cream, cheese, avocado, or whatever else.

MAKES EIGHT GINORMOUS SERVINGS. One serving is 164 cals / 1g fat / 21g carbs /
16g protein (This is BEFORE adding the tortilla strips.)

I used a pizza cutter to cut up eight corn tortillas, then threw them in a bowl and sprayed
them with cooking spray to coat them with oil. Baked them on a cookie sheet for about
15 mins at 400 degrees while the soup was cooking in the IP. Put them in the oven as
soon as the Instant Pot reaches pressure and the soup timer starts.
